Organic Wines / Substainable Wines

The name of our farm “Pomaio” comes from the Latin word Pomarium, meaning “place of apples and fruits”. Our wines are the result of the work on our organic vineyards grounded on the respectfulness of the environment. Our small production of wine features yearly 15.000/20.000 bottles made from mostly, Sangiovese grapes. Only the grapes coming from our vineyards have access to our winery. The multiple expression of the surrounding territory can elegantly be perceived through our organic wines. The excellent exposure of soil and altitude of approximately 550 meters (above the sea level) along with the strong temperature changes during the ripening phase give us delicious fragrant wines with a characteristic mineral taste. Our wine production features five different labels from two different varieties of grapes: Sangiovese and Merlot, ost of the times in purity. While the Rosso Toscano IGT Pomaio and the Chianti D.O.C.G represent an immediate and simple exemplification of out terroir, the Clante (made by 100% Merlot head-trained bush vines) and the Porsenna (100% Sangiovese Cru) define the surroundings in a complex and structured taste.  Finally, our rose wine Rosantico extracted from Sangiovese grapes, shows as its best all the mineral taste and elegance of this land.

Refining:In big wood barrels of Slavonian Oak and Chestnut like in the old Tuscan tradition

Porsenna is pale ruby red. Elegant wine with really complex nose, marking fresh notes of oranges blended in the traditional aromas of Sangiovese like dark cherry, macerated red and rose flowers. Evident fumé note closing after evidente aromas of tobacco, cacao and cloves. The almost mountain climate of Pomaio reflects in Porsenna adding sharp freshness to the tasting. The tannins are precise and evident but almost whispered. The taste is lingerin and long making this wine a bottle both for dining and meditation.

Chianti D.O.C.G.

90% Sangiovese – 10% MerlotDOCG – Denominazione di Origine Controllata e Garantita Chianti

Maturation:12-18 months in 50 hl steel vat. 30 months for the Riserva version
Refining:In bottle for at least 12 months

Production:6.000 bottles in 0,75l

Ruby red with purple shades. Quite intense and quite complex at the nose, slight orange scent perfectly blended with the classic Sangiovese aromas such as cherry, dust, and mature red flowers with a slight smokey finishing. The great saltiness is given by the terroir of Pomaio together with nice acidity and delicate integrated tannins. On top level vintages we exclusively produce the Riserva version.

Clante

100% Merlot growing with the french style “Alberello”IGT – Indicazione geografica Tipica – Toscana Merlot

Refining:I2 months in chilling inside used french oak barriques

Production:Around 1000 bottles per year

Clante is Podere di Pomaio’s challenge to characterize an international grape with the farm’s unique terroir. The results is a merlot with a pale purple color, a bouquet that goes from plum to a violet touching intense aromas of graphite and flint with a hint of boise remembering tobacco, licorice and not so sweet spicy notes. At the palate is sharp, vertical, easy to drink with velvet tannins and memories of blackberries.

Pomaio Origini

Production:6.000 bottles in 0,75l

Pomaio Origini is a traditional wine with a contemporary taste. Vertical and elegant wine, quite fresh and with really delicate tannins. Fine notes of red-berries and traditional minerality of Pomaio’s terroir.

Rosantico

Vinification:In steel vat with quick skin contact of about 6-8 hours maceration
Maturation:6-8 months in 25 hl steel vat
Refining:3 months in bottle
Alcohol:14% VOL
Production:3.000 bottles in 0,75l

The color is pomegranate with salmon shades. Wine of great intensity at the nose with a fresh aroma of citrus, melon and kaki, floreale not close to acacia honey and flint stone. the mineral and sapid characteristic of Pomaio’s terroir finds its top expression in this wine. Amazing acidity.

Olio Extra Vergine

Olive Grove:Traditional plants cultivated on terraces with an optimal Exposure to the southwest at an altitude of more than 500 m.s.l.m.
Variety:Frantoio (50%), Moraiolo (35%) and Leccino (15%)
Form of the Breeding:Polyconic vase
Soil:Very draining and rich of rocky skeleton
Time of Harvest:Manual harvesting end of October, beginning of November. The olives remain for collections in Podere di Pomaio’s storage only a few hours inside small boxed ready to be pressed within 48 hours
Type of crushing and extraction:Organic certified mill using a Modern Continuous System (temperature control) with hammers and centrifugation
Storage:In stainless steel containers in deposits with controlled temperature
N. Bottles:On average 1500 bottles/year 0.5 l

The soil and climate characteristics and agronomic management allow Podere di Pomaio to obtain a product of an excellent quality. The high hilly environment represents an extreme situation for the olive tree, where it can express however the maximum of its quality potential. A soil with a really good draining and rich in skeleton, the ventilated environment, the optimal exposure and the ow aggressiveness of parasites ( in these extreme condition ) allow us to get healthy and perfectly ripe olives. A quick crushing and the use of a modern technology of extraction combined with low yields give birth to an EVO oil with a really low acidity, great intensity and aromatic complexity with notes of artichoke and very evident fruit scents. The taste is strong, yet very fruity and with a pleasant level of spiciness and bitterness, characteristics that distinguish an extra virgin olive oil coming from Tuscany.
