Organic Wines / Substainable Wines

The name of our farm “Pomaio” comes from the Latin word Pomarium, meaning “place of apples and fruits”. Our wines are the result of the work on our organic vineyards grounded on the respectfulness of the environment. Our small production of wine features yearly 15.000/20.000 bottles made from mostly, Sangiovese grapes. Only the grapes coming from our vineyards have access to our winery. The multiple expression of the surrounding territory can elegantly be perceived through our organic wines. The excellent exposure of soil and altitude of approximately 550 meters (above the sea level) along with the strong temperature changes during the ripening phase give us delicious fragrant wines with a characteristic mineral taste. Our wine production features five different labels from two different varieties of grapes: Sangiovese and Merlot, ost of the times in purity. While the Rosso Toscano IGT Pomaio and the Chianti D.O.C.G represent an immediate and simple exemplification of out terroir, the Clante (made by 100% Merlot head-trained bush vines) and the Porsenna (100% Sangiovese Cru) define the surroundings in a complex and structured taste.  Finally, our rose wine Rosantico extracted from Sangiovese grapes, shows as its best all the mineral taste and elegance of this land.

Porsenna

In this wine the scents of violets, cherry and red berry fruit are well integrated by the tertiary notes that developed during the aging in barrels and bottles.

Clante

This wine expresses through its ruby red color with deep purple hues an intense aroma with notes of jam and delicately spicy taste.

  • Production:  A  limited number of numbered bottles obtained from the cultivation of 1000 head-trained bush vines “with all the love of one single mother plant”.

Chianti D.O.C.G

This wine is an original and authentic expression of Sangiovese grapes through its ruby red color with purple hues and its distinctive fruity taste.

  • Wine Making Process: in stainless steel vats with a 20 days maceration in contact with the skins at a controlled temperature
  • Maturation method and length: 6-9 months in 50 hl stainless tubs and 3-6 months in bottles
  • Alcohol by volume :13%
  • Production: 10.000 bottles (0,75)

Rosantico

Wine of great intensity and aromatic complexity with a floral and not fully ripened fruit taste. In this Pomaio wine, the flavors and the character of minerals find its highest expression.

Pomaio

The everyday wine, simple and easy to drink with clear and pleasant fruity and floral notes in the mouth.

Olio Extra Vergine

EVO oil with a really low acidity, great intensity and aromatic complexity with notes of artichoke and very evident fruit scents. The taste is strong, yet very fruity and with a pleasant level of spiciness and bitterness, characteristics that distinguish an extra virgin olive oil coming from Tuscany.

  • Frantoio (50%) Moraiolo (35%) Leccino (15%)
  • Manual harvesting at the end of October, beginning of Novembre. Once picked, the olives remain for only a few hours inside Podere di Pomaio’s deposits, resting in small boxes and ready to be pressed within 48 hours
  • Pressed at an Organic Certified Mill with a modern continuous system (temperature control) with hammers and centrifugation
